Canton New York, purchased from a restaurant

My partner Christopher purchased this from a local restaurant that recently closed. We brought it home and just love it. We are currently in the process of cleaning and re invigorating the surface(s). One question – what is the black material used on the bottom??
Also please forgive the floor uncleanliness – we are remodeling and will not get to cleaning it until the weekend – busy busy busy.
